"Bhenda Sagle" or Lady's Finger Masala (Konkani Style)

Lady's Finger is a good provider of good bacteria called the probiotics which help in digestion. It also consists of good amounts of vitamin A, required for growth and repair of skin as well as maintain vision. There are also fair amounts of vitamin C, which boosts immumnity.
There are good amounts for dietary fiber present, hence it is low in colories and considered good for people on weight loss.
Here is simple and an old traditional Konkani recipe that I learnt from my Mom. Lady's finger is also known as "Bhe'nd" in Konkani which is a favourite with all of us at home.
Made with very few and easily available ingredients at home, this dish goes well both with rotis as well as rice and dal.

Serves 2
Ingredients:
Lady's finger - 6
Grated or desiccated coconut - 1/2 cup
Tamarind piece - 1 inch
Dry red chillies - 5
Coriander seeds - 2 tsp
Methi or Fenugreek seeds - 1/2 tsp
Coconut Oil or Olive oil - 1 tsp
Mustard seeds - 1 tsp
Curry leaves - 7 to 8

Method:
Wash and cut each the lady's finger into 3 equal pieces and keep aside.
Dry roast the red chillies, coriander seeds and methi until they give out a good aroma.
Now wet grind coconut , tamarind and the roasted spices along with 1/2 cup water to form a smooth paste.
Now take a heavy bottomed pan, keep on medium heat, add oil and when its hot add the mustard seeds and allow to crackle. Now add curry leaves, fry for 1/2 minute and then add the lady's finger and fry till all the stickiness from the lady's finger has disappeared and the lady's finger is tender.

Now add the ground masala and salt and mix well. Add 1/2
cup water and and bring to boil around 5-7 minutes.
Serve hot with rotis or rice and dal.
