Methi or Fenugreek leaves are very good for health, as they are rich in anti-oxidants, iron and fibre.
These parathas are a good way to include them in your daily diet.

Makes 8-10 Parathas
Ingredients :
Methi/fenugreek leaves -1 cup - washed/drained/chopped
Atta/Wheat/Multigrain wheat - 4 tbsp
Coriander powder - 1 pinch
Cumin powder - 1 pinch
Chilli powder - 1 pinch
Chat masala - 1 pinch
Black salt - 1 pinch
Coriander leaves (Optional)
Mint leaves ( Optional)
Method :
Make dough using the Wheat/Multigrain, same consistency as Chapati dough. Add methi leaves and all the masala/spice powders and salt while kneading the dough.

If you want the taste of coriander leaves and mint leaves you could add them too.
Knead the dough well into rolling consistency.
Divide the dough into 8-10 equal portions.
Roll each portion evenly into round flat bread/chapati.
Now take a tawa or shallow fry pan, fry the parata on low heat, till evenly done on all sides.
If non stick tawa is used there is no need to add oil/ghee while frying.
If regular or anodized tawa is used, use ghee while frying.

Serve hot with lots of butter, green chilly pickle and curds.
