Prawn Stir fry with Tri-Color Peppers & Cashewnuts


This is a starter which I created just now as we were feeling hungry and cold and all we wanted was some warm food to eat.
Had some prawns and some peppers (capsicum) in different colors, so just thought of putting these together and making a quick starter... used some chinese ingredients which were in my kitchen.. and there you have "Prawn Stir fry with Tri-Color Peppers and Cashewnuts"... you could say this is a Chinese inspired dish....
Quick to make.. and yummy to taste...!!


Serves 3
Ingredients:
Prawns - cleaned and de-veined - 500 gms
Yellow pepper - 1/2 - cut into rounds and then halved
Red Pepper - 1/2 - cut into rounds and then halved
Green Pepper / Capsicum - 1/2 - cut into rounds and then halved
Spring onions - chopped finely - 2 tbsp
Hoisin sauce - 1 tbsp
Chinese 5 spice powder - 1/2 tbsp
Cashewnuts - 1 handful - roasted - I have used packed roasted chilly cashewnuts
Sesame seeds/White til - 1 pinch to garnish
Olive oil - 2 tsp
Salt - as per taste

Method:
Take a large heavy bottomed pan or Chinese wok... keep on medium heat, add oil and fry the spring onions and all the sliced peppers till crisp, around 3-5 minutes.
Add the Hoisin sauce and five spice powder and fry on high heat for about 30 seconds.
Now add the cashewnuts and fry for another 30 seconds.
Then add in the prawns and stir fry for about 2-3 minutes till the prawns become opaque. 
Prawns cook very fast, so make sure you switch off the heat as soon as they are opaque.
You would have noticed by now that I have not added salt, well just taste and then add, the Hoisin sauce and Chinese five spice powder already have some salt content.
Adding without tasting, may make this dish salt.
Infact I did not add any salt to this dish.
Now transfer to a warm serving dish and garnish with sesame seeds.
There you have... a quick, healthy and easy to make Prawn starter....!!
